Job Description

We are currently seeking for ambitious, dynamic, self motivated Food & Beverage professionals who assist to organize and direct a team that develops top quality of food & beverage products with prompt, accurate and personalized service.

As a Trader Vics General Manager, you are responsible for effectively managing all aspects of the restaurant and bar concept, in order to ensure optimum results are achieved across all facets of the operation, in line with Departmental targets, policies and procedures.

•Be the main point of contact with Trader Vics Corporate and other Trader Vics in the region

•Communicate on a regular basis with Corporate Trader Vics and keep the Hotel informed of any developments in the company

•Proficient in the History of Trader Vics and be at all times an Ambassador of the Brand and the hotel Beach Rotana

•Responsible for action the Business Plan and strategy

•Responsible for preparing the Marketing and Promotional Calendar in line with Trader Vics and The Hotel F&B Marketing Plan

•Have input with F&B office of selection and recruitment of Trader Vics colleagues in line with Trader Vics and Rotana required skills set

•To implement, follow and ensure consistency in all Rotana Standards, Policies and Procedures

•Supervise good Guest service and serve Guests according to Hotel standard in order to ensure maximum Guest satisfaction

•To take ownership for the up-keeping of the front and back-of-house areas with regards to all physical aspects of the area and the theme

•To maintain FF&E and SOE of the outlets quantity , quality and condition

•Report directly to the Assistant Director of F&B

•Make sure Trader vic’s targets are met by upselling, guests satisfaction ,staff products knowledge , handling complain in proper way by not losing guests loyalty in the place

•Follow up on all maintenance need it and keep the place in good condition all the time

•To develop and nurture a strong work relationship with key-partners in other Trader Vics and in the Hotel such as Sales & Marketing, Housekeeping, Engineering and Materials.

•Identify training needs and propose training plans in order to maintain standards of service

•Plan and conduct On and Off job training on a regular basis in order to achieve Trader Vics and Rotana service standards and good product knowledge of our colleagues

•Evaluate performance of team and initiate promotions or internal transfers

•Attend daily F&B briefings or meetings and ensure proper communication down to the team

•Prepare duty rota according to the forecast and business trend in order to ensure adequate manpower for operational needs

•To be aware of other events in town that may impact the business and maximize every single opportunity

•To continuously analyse the Market and the competition through regular competition checks

•Resolve Guests’ complaints directly or consult with the Assistant Trader Vics Manager and/or Bar Manager to maintain Guest satisfaction

•Train personal grooming standard and monitor the weekly checklist in order to keep professional appearance

•Monitor hygiene and cleanliness standards in the outlet and upkeep of all service equipment as per Hotel standard

•To have a minimum certification of WSET Intermediate level in wine and spirits

•To have a minimum of 2 years as a Restaurant and Bar Manager experience

•To organize all Promotions and prepare Post-Mortems for the same

•To prepare an End of Month report

•To analyse and prepare a P&L statement for the Outlet

•To prepare and submit a ‘Furniture, Fixtures and Equipment’ Request

•To continuously strive to improve the RCSS

•To score a minimum of 90% on all Mystery guest Audits and Kanari survey , wherever below to prepare action plans and drive improvement

•Operate in a safe and environmentally friendly way to protect guests’ and colleagues’ health and safety, as well as protect and conserve the environment

Skills

Education, Qualifications & Experiences

You should be a college / university degree graduate with a minimum of 2 years as a Restaurant and Bar Manager experience. You should have a minimum certification of WSET Intermediate level in wine and spirits. You must be a computer literate with effective communication skills and an excellent command of written and spoken English.
