Job Description

 

As a Pastry Chef, you are responsible of the Pastry and Bakery operation / Production of 2 Hotels "Pearl Rotana" and "Centro Capital Centre", assisting the Executive Chef in the day to day operation, taking over all responsibilities during his absence, striving for the highest possible Guest satisfaction.

  • Maintain the highest possible hygiene and maintenance standards. Ensure the highest degree in applied hygiene and food safety as per the ADFCA, HACCP guidelines to ensure that the food is served to the Guest in the highest quality and standard
  • Support the Executive Chef directly in order to have a smooth operation
  • Ensure that all bakeries and pastry dishes leaving the kitchen are of appropriate portion and presented as per recipes and presentation standards set by the Hotel
  • Create high quality and creative pastry products to satisfy the Guests needs

  • Work in close cooperation with all other key departments in the Hotel to ensure a smooth operation
  • Control the food cost by preparing / reviewing all store requisitions and direct purchases and ensure the accurate delivery of goods in order to achieve the budgeted profitability and minimizes wastage
  • Drive all menu changes, document all desserts and pastries along with the Executive Chef in coordination with the Director of Food & Beverage to keep the menus exciting.
  • Attend required meetings and conduct daily briefings with your team members ensuring efficient communication, to run the bakery and pastry smoothly
  • Handle Guest complaints/suggestions/requests directly to achieve high Guest satisfaction.
  • Ensure Colleague Development in your kitchen team in order to train/guide/motivate your team members to achieve highest quality standards set by the Colleague Development Department and the  Executive Chef
  • Plan effectively all FF&E and Operating equipment (in consultation with the Executive Chef) for your kitchen to ensure a smooth operation
  • Participate actively to meet / maximize the department’s revenue forecast and exercise the constant control of the operational costs
  • Train all the team members under direct supervision in order to produce very high standard of bakery and pastry products (set by the Executive Chef) in the Kitchen
  • Operate in a safe and environmentally friendly way to protect guests’ and colleagues’ health and safety, as well as protect and conserve the environment
  • Comply with the hotel environmental, health and safety policies and procedures.

As a Pastry Chef you are responsible for the smooth operation of the Pastry Kitchen with emphasis on quality, presentation within the guidelines of the standardized menus and employee training, whereby your role will include key responsibilities such as:

  • Supervise the pastry kitchen in the preparation and presentation of all food items.
  • Monitor regular standards of production to ensure highest level of quality.
  • Monitor all aspects pertaining to the control of the hotel’s food cost.
  • Create high quality and creative pastry products.
  • Participate in the drafting of concept ideas and menus for all special events and functions while encouraging all employees to put forward their ideas and utilizing them wherever practical.
  • Ensure HACCP standards are implemented and follow the appropriate hygiene standards as per Municipality requirements at all times.
  • Ensure consistent on the job training session for culinary colleagues and promote health & safety.

Education, Qualifications & Experiences

You should have a professional kitchen apprenticeship or chefs training course and at least three years experiences in quality establishments along with excellent pastry and bakery skills. The ability to communicate well in English and a proven track of patisserie preparation, presentation and preservation knowledge is an essential.
