We are currently seeking for dynamic, ambitious and self motivated Food & Beverage professionals who assist to organize and direct a team that develops top quality of food & beverage products with prompt, accurate and personalized service.
As the Director of Food and Beverage Operations, you are responsible for ensuring that all areas within the Food and Beverage department are properly managed in a structured and professional manner. Coordinates to all phases of restaurant operational functions held in the Hotel and coordinate these activities on a daily basis; assist clients in program planning and menu selection. Solicit local group internal or external function business; maintain the services and reputation of your Hotel and act as management representative to group clients.
DUTIES AND RESPONSIBILITIES:
• Takes overall responsiblitiy for Catering and Operation department including Banquets, Suites Café, Club Rotana, Bay View, Room Service, Café Columbia and Essence.
• Achieves budgeted food sales, beverage sales, labour costs and profitability.
• Completes Customer Follow-up calls on a timely manner.
• Entertains the potential and existing customers.
• Conducts competitive analysis every six months and gathers data such as prices, Banquet kitchen, room rental rates, etc.
• Telemarkets previous clients to inquire possible future bookings.
• Attends and conducts regular departmental meetings and briefings to ensure an open communication line with team.
• Conducts performance analysis of every key personnel as per policy.
• Develops and maintains the department’s control procedures.
• Collaborates with the C&E team the organization of banquets and events
• Confirms all details of group functions with meeting/banquet planners.
• Controls and approves purchase requests and store requisitions for operating material, food products and beverages.
• Monitors department duty rota to ensure efficient manning at all times.
• Reviewd and approved all payroll related documents, at the end of the month prior to handing them over to account
• Initiates the departmental Standards of Performance manuals and establishes the supporting training programs
• Achieve budgeted revenues & expenses and maximize profitability
• Complies with other duties as directed by the EAM i/c F&B or General Manager.
• Operates in a safe and environmentally friendly way to protect guests’ and employees’ health and safety, as well as protect and conserve the environment
• Complies with the hotel environmental, health and safety policies and procedures
Skills
Education, Qualifications & Experiences
You should be a college / university degree graduate with a minimum of two years experiences in a similar role with preferable previous experiences in the Middle East. You must be a computer literate with effective communication skills and an excellent command of written and spoken English.
